Ingredients
Serves: 1 oz portions
- Dry Ingredients (by weight):
- 448.4g blanched almond flour
- 217.4g almond protein powder (50% protein)
- 244.6g ultra sperse corn starch
- 54.4g sugar
- 54.4g za’atar seasoning blend
- 5.4g baking soda
- 4.8g salt
- 3.4g monocalcium phosphate
- Wet Ingredients (by weight):
- 326g water
Preparation
- In a mixer, combine all dry ingredients until evenly blended.
- Add water and mix until a soft, pliable dough forms.
- Roll the dough into thin sheets (1.1 to 1.2 mm) using a pasta roller.
- Lightly dust with almond flour to prevent sticking.
- Use a cracker roller/cutter to shape and perforate the dough.
- Bake at 188°C (370°F) for 9–10 minutes, or until golden and crisp. Adjust time based on your oven.
