






Golden Almond Tepache
DURATION: 2-3 days fermentation plus preparation time
Ingredients
- 1.89 L Almond milk, unsweetened
- 1 large pineapple
- 1.89 L Water, filtered, hot
- 71 g Light brown sugar
- 1 cinnamon stick
- 3 cloves
- 0.91 kg Pineapple, fresh or IQF, small chunks
- 0.28 kg Passion fruit puree
- 4.5 g Turmeric, ground
Preparation
Prepare the Tepache:
- Starting with the whole fresh pineapple - slice off and discard the pineapple crown & bottom. Slice off the outer pineapple rind and reserve those rind pieces. Core the pineapple and reserve the core. Cut the actual pineapple meat into small chunks and reserve chilled (until needed in step 2).
- Place hot water (using hot water coming out of your tap) in a large container. Add brown sugar and whisk to fully dissolve the brown sugar. Add the cinnamon sticks, cloves and the reserved pineapple rind and pineapple core to the container.
- Cover the container (with all the hot water & ingredients) with a kitchen towel or cheesecloth (so the mixture can breathe) and store at room temperature for 2-3 days, so everything ferments and creates the tepache.
- Skim & remove any fermented foam off the top of the tepache, then strain the liquid through a fine chinoise or cheese cloth (discarding the solids and saving the liquid).
- Reserve the tepache chilled.
Prepare the Golden Almond Tepache:
- Place the reserved chilled tepache liquid in a large container. Add the almond milk, reserved chilled pineapple chunks (supplement with fresh or individual quick-frozen pineapple chunks to make up all the portion needed), passion fruit puree and turmeric; then puree to evenly combine.
- Strain the beverage through a fine chinoise or cheese cloth (discarding the solids and saving the liquid).
- Place the Golden Almond Tepache in a sealed container and store refrigerated.

Unsweetened almond milk is blended with tepache (a fermented pineapple drink), pineapple, passion fruit puree and ground turmeric for a refreshing beverage combining pre- and probiotics. This functional drink was inspired by the growth and appeal of fermented beverages.
