Ingredients


Serves: 4 patties (112g each)

  • 71g textured pea vegetable protein (70%)
  • 202g water
  • 72g almond flour
  • 27g olive oil
  • 27g cocoa butter
  • 7g methyl cellulose
  • 22g apple cider vinegar
  • 3g freeze-dried onion pieces
  • 4g red beet juice powder
  • 3g freeze-dried garlic pieces
  • 4g yeast powder
  • 4g psyllium husk
  • 2g salt

Preparation

  1. In a large bowl, hydrate the textured pea vegetable protein by adding water; let stand for about 15 minutes.
  2. Add all other ingredients into the textured protein mixture.
  3. Mix well until it has the appearance of ground raw meat.
  4. Cover the bowl and chill in the refrigerator until slightly firm in the center, about an hour.
  5. Weigh out 90–112g (approx. ¼ lb) portion to form one patty (approx. 2cm deep and 11cm diameter), using a hamburger press or shaping by hand.
  6. Pan-fry or oven-fry the patty on medium until crispy on the outside and cooked through.
  7. Refrigerate leftover patties for up to 7 days or freeze and use within 6 months.
