Vegan Almond Butter Goji Energy Balls

Ingredients (Makes approx. 28 energy balls)
For the Filling:
- ½ cup / 120 g almond butter
- 4 tbsp / 60 ml almond milk
- 1½ cups / 135 g oats
- ¾ cup / 84 g dried goji berries
- 4 tbsp / 60 ml maple syrup
For the Coating:
- 170 g vegan, soy-free, dairy-free dark chocolate (such as Compartes PURE, or any dairy-free chocolate bar, chopped)
- 1 cup / 70 g puffed quinoa
Preparation
- In a food processor, mix all the filling ingredients until they are well combined and stick together when pressed.
- Shape the mixture into evenly sized balls, about ¾ in / 2 cm each. Refrigerate the balls.
- Set up a double boiler and melt the dark chocolate.
- Place about half of the puffed quinoa in a medium bowl.
- Using a fork or dipping tool, dip each ball lightly into the melted chocolate. Let any excess chocolate drip off.
- Drop the ball into the quinoa and gently shake the bowl to coat it evenly.
- Transfer the coated balls to a tray lined with parchment paper.
- Repeat with the remaining balls, adding more quinoa to the bowl if needed.
- Refrigerate for about 10 minutes or until the chocolate hardens. Store in an airtight container in the refrigerator.
Notes
Almond butter adds healthy fats, protein, and a creamy texture. Goji berries bring natural sweetness and antioxidants. You can swap maple syrup for honey or agave if you prefer.
