Ingredients
Serves: 8For the Orange Chicken
- 2 lbs chicken breast, cut into chunks
- 1 egg, beaten
- 2 tbsp kosher salt
- ½ tsp white pepper
- ½ cup cornstarch
- ½ cup all-purpose flour
- ¼ cup almond flour
- Frying oil as needed
- 1 oz sliced scallions
- 2 tbsp sesame seeds
- Slivered almonds as needed
For the Orange Sauce
- 2 tbsp canola oil
- 2 tbsp chopped ginger
- 2 tsp chopped garlic
- ¼ cup rice wine
- 3 tbsp soy sauce
- ¾ cup orange juice
- 1 tsp red chili flakes
- 2 tbsp sesame seed oil
- ¼ cup water
- 2 tbsp cornstarch
Preparation
For the Orange Chicken
- In a large bowl, combine the chicken, egg, salt, and pepper. Mix to coat the chicken.
- Add the cornstarch, all-purpose flour, and almond flour; toss to coat evenly.
- In a 350°F fryer, fry the chicken until internal temperature reaches 165°F and golden brown.
- Drain and toss with 340.2 grams Orange Sauce. Garnish with scallions, sesame seeds, and slivered almonds.
For the Orange Sauce
- In a saucepan over medium heat, add canola oil, ginger, and garlic; sweat until fragrant.
- Add rice wine; reduce by half.
- Add soy sauce, orange juice, chili flakes, and sesame oil. Simmer for about 15 minutes.
- Whisk together the water and cornstarch. Whisk it into the sauce and simmer to desired consistency.
- Combine water and cornstarch, thicken sauce to desired consistency.
