Almond & Brussel Sprout Salad

Ingredients
Serves: 4
- 1/2 cup slivered almonds
- 1 pound shaved brussels sprouts
- 1 medium Granny smith apple, peeled and cubed
- 2 tablespoons olive oil, divided
- 1 tablespoon dijon mustard
- 1 lime, juiced (about 2 tablespoons)
Preparation
- Heat pan over low heat and add almonds. Toast until lightly browned, being careful not to burn them. Set almonds aside to cool.
- Add 1 tablespoon of oil to the pan and add brussels sprouts to a large saucepan. Cook for 5-7 minutes or until soft. Let brussels sprouts cool and then transfer to a large bowl.
- Add apple and almonds to brussels sprouts.
- In a small bowl whisk together the remaining olive oil, mustard and lime juice. Pour dressing over salad and toss together right before serving.
